Paint the Town Red: Miami Being Well-Fed

By Justina Coronel Red, The Steakhouse has created a secret menu with multiple items ranging from appetizers to desserts. Executive Chef, Peter Vauthy, formed an amazing menu that features only the finest Certified Angus Beef Prime with every food item being made from scratch. Vauthy said that he had to limit the original menu but if anyone asked for any of the items off the secret menu that they would be able to whip it up as well. The appetizers entailed five different choices but the flash fried lobster tail and the king crab cake with corn salsa stole the show and our taste buds. With the entrees, the 28 Day Dry Certified Angus Beef Prime King Crab Crusted Tomahawk and the Certified Angus Beef “Prime Rib” were worthwhile with every single bite. To tie it together, the sides were the perfect combination including the mac n cheese flight, which featured a Bacon Mac, a King Crab Mac, and a White Truffle Mac. The Wines of Guado al Tasso

By Alyse Mier Renowned winemaker Allegra Antinori led wine enthusiasts through a tasting as part of Wine Spectator’s Wine Seminar series, hosted annually during South Beach’s Wine and Food Festival. From fruity whites to full structured reds, with notes of spice, the wines varied greatly in color, price and taste. Antinori explained the rich history behind each of the five wines being sampled and described the complexity of the land in the Bolgheri region, where the wines are made. These challenges contribute directly to the unique qualities of each wine. The Antinori family history is a narrative about devotion to wine making. It stretches 26 generations and is deeply rooted in the family’s legendary Guado al Tasso Estate in Tuscany. Guests can account for how the Antinori’s commitment to tradition, passion and innovation has made them one of the leading producers of fine wine.

It consisted of various cocktail brands, wineries, and craft beer stations where guests were welcomed to get to know the well-known brands on a deeper level. In addition, the Hard Rock Hotel & Casino set up a lounge area with a DJ for those wishing to dance off the food and wine tastings. One the highlights, however, was the Silk Nutchello stand where Chef Katie Lee introduced craft cocktails made with the creamy beverage for guests to learn how to create the refreshing cocktail.

Martini Shake Off at the Raleigh Hotel

By Alyse Mier The Raleigh Hotel in Miami Beach hosted its monthly Cocktail Shake Off on February 5th. Guests sampled a variety of specialty cocktails and voted for their preferred drink. The cocktail with the most votes will be featured in the Martini Bar’s menu for the month of February. This month’s competition featured Famous Grouse, a medium full flavored whiskey with notes of oak, sherry and citrus that played a central part in many of the cocktails. Stephen Wicker, the bartender, blended unique ingredients such as egg whites, bitters, coconut demerara and almond milk into the rich amber cocktails, which left guests ordering full sizes of their favorite sample. The winner and our personal favorite was the Scotchtail, a refreshing, light amber libation made up of Famous Grouse Scotch, coconut demerara, agave nectar, lemon juice and orange bitters.
