Triple-Layer Raw Chocolate Mint Cream Bars Recipe

In celebration of Chocolate Day, why not try a new chocolate recipe without breaking your diet? This Triple-Layer Raw Chocolate Mint Cream Bar recipe, made possible by celebrity nutritionist and author of The Beauty Detox Power Kimberly Snyder, contains ingredients beneficial to your healthy and beauty. The recipe came about when Kimberly was preparing to bake a birthday cake for a close friend. INGREDIENTS Base Ingredients: – Parchment paper, for lining the loaf pan – 1⁄2 cup raw almonds – 1⁄2 cup raw pecans – 1 cup medium Medjool dates, soaked and well drained – 1⁄4 cup cacao powder Pinch of sea salt Mint Cream Filling Ingredients: – 2 small ripe Hass avocados, peeled and pits removed – 1⁄3 cup minced fresh mint – 1⁄3 cup coconut nectar – 1⁄4 teaspoon organic peppermint flavor – 1⁄4 cup melted coconut oil Chocolate Topping Ingredients: – 1⁄4 cup coconut oil – 1⁄4 cup raw cacao powder – 2 tablespoons coconut nectar INSTRUCTIONS 1. Line the bottom of a 9 x 5-inch loaf pan with parchment paper. Be sure to leave an overhang so it’s easier to remove the finished bars. Set aside. 2. Prepare the base. Combine the almonds and pecans in a food processor, and process to form to a coarse meal. Add the dates and process until the dates are broken down. Add the cacao powder and salt and pulse to combine. The nut-date mixture should stick together when pressed between two fingers. Press the nut-date mixture into the bottom of the prepared loaf pan and set in the freezer to make a crust while you prepare the filling. 3. Prepare the filling. In a high-speed blender, process the avocados, mint, coconut nectar and peppermint flavor until smooth. You may need to stop the blender and scrape down the sides a few times. Add the melted coconut oil and blend for a few seconds to combine. The mint mixture should be thick and creamy. (If your blender doesn’t process the mixture very well, try blending it in batches until smooth.) 4. Remove the loaf pan from the freezer. Pour the avocado-mint mixture on top of the nut-date crust, smoothing it out with an offset spatula or the back of a spoon. Return the loaf pan to the freezer and let the avocado-mint layer get firm, at least 1 hour. 5. Prepare the chocolate topping. You’re almost there! Last layer, here we go. Whisk together all the ingredients in a small bowl until smooth. 6. Remove the loaf pan from the freezer once again and pour the chocolate topping on top of the avocado-mint layer, smoothing it out quickly with an o set spatula or the back of a spoon. Return the loaf pan to the freezer one last time and allow the topping to set, at least 1 to 2 hours. 7. To cut this into bars, remove the triple-layer block from the loaf pan by pulling up on the parchment paper. Set it on a cutting board. Place a sharp serrated knife in a jar of hot water for several minutes, wipe it with a kitchen towel, and then, using a light sawing motion, cut the block into squares. It’s okay if the top cracks (I think it actually looks pretty that way), but try to keep all the layers intact. Warm the knife in the water as needed to cut all the squares. 8. Food Network UK Star, Andy Bates, Brings a British Gastropub to Miami

In November, the project A&Eats: The Search for Miami’s Next Great Restaurant Concept, which is a community-driven contest, put together a live cook-off competition for a winner to open up the next big thing in their area. With more than 60 submissions, 4,000 online votes, and 30 plus semifinalists, The Avenue was a people’s choice and ultimate winner. The Avenue, a British gastropub concept, will open up in the fall on the ground floor of the Filling Station Lofts to take over Miami’s taste buds. The Food Network UK star, Andy Bates, is the mastermind and chef in construing these mouth-watering British pub food classics that are perfectly paired with American craft beers. As a starter, guests can enjoy the Welsh Rarebit, which is ‘deviled’ cheddar cheese and beer placed on toasted sourdough paired with a light and crisp beer. Another dish called the Scotch Egg has a soft boiled egg wrapped in sausage that is breaded and fried. Besides having the classic recipe of fish and chips, The Avenue will also have a British favorite, the Pie and Mash, which is a beef, ale, and bone marrow pie with a side of mash and peas. To top it off, a delicious dessert option will include a Sticky Toffee Pudding, which is a date and treacle sponge with condensed milk ice cream. With hearty meals and brews, The Avenue will have a down-to-earth atmosphere and will be the newest hot spot in the upcoming Arts and Entertainment District.

A Preview of the 15th Annual South Beach Wine & Food Festival

From fan favorites to new and exciting vendors, more than 80 events will span between Miami-Dade and Broward counties. As if there weren’t already a variety of tastes to discover, here are a few new venues to experience during the Festival. “Exploring Israel Dinner hosted by Ashley Christensen, Alon Shaya, Michael Solomonov, and Zak Stern” is hosting the Festival’s first kosher dinner at Rok Family Shul – Chabad Downtown Jewish Center on Thursday, February 25th. The local food authority of Burger Beast organized 15 of South Florida’s best to present a creative twist on this classic recipe. “Sweet 15: A Dessert Party hosted by Duff Goldman” will take place at Miami’s iconic, The Villa, Casa Casuarina, to celebrate the Festival’s 15th anniversary by having a dozen of the nation’s top pastry chefs to whip up some delicious desserts.
